About time, but spring finally arrived! It?s the perfect season for fresh, nutritious salads. What to think about this one, with hemp seeds and fresh herbs. Spring never tasted so good!
4 hands full mixed leafy greens (spinach and arugula are a great combination)
2 hands full of mixed fresh herbs (think cilantro, basil, parsely)
1 hand fullof hemp seeds
2 hands full of sprouts
1 hand full of pine nuts
1 avocado, chopped in length
2 tomatoes, chopped
2 tbsp olive oil
pepper and sea salt
Mix the leafy greens with the herbs. Roast the pine nuts in a dry frying pan until golden brown. Add the pine nuts, hemp seeds, sprouts, avocado and tomato to the greens and give it a good toss. Mix the lemon juice together with the olive oil, pepper and salt. Bedazzle your salad with the dressing and get yourself a nice taste of spring!
