Health boosting Miso soup

Miso soup is one way to get your share of fermentation.

As I already wrote in my article about fermented foods, these foods are essential to keep the gut healthy. And a healthy immune system starts with a healthy gut. Miso soup is one way to get your share of fermentation. Miso is a paste made from soybeans, sea salt and koji. It ferments for about 3 months up to 3 years. One of the active ingredients in miso is zybicolin, which plays a major role in the detoxification of your body through pollution, radioactivity and chemicals in the soil and food system.

With this recipe you get all the benefits of the miso combined with all the benefits of the veggies in there, which makes this soup a mighty powerful health booster. For this recipe I’ve used kale, celery and carrots. But of course you can add in any vegetable you like. The combinations are endless!

Veggie Miso Soup

Ingredients

1 liter vegetable broth

3 garlic cloves, grated

3 tbsp fresh ginger, grated

1 onion, chopped

100 gr carrots, thinly sliced

2 stalks celery, thinly sliced

60 gr miso

100 gr kale
Get a soup pot and bring the vegetable broth to a boil, together with the garlic and ginger. Then turn the heat low and add the chopped onion, the carrots and celery. Cook for about 10 minutes. Meanwhile, mix together the miso paste with 2 tbsp vegetable broth. Then turn off the heat. Add the kale leaves and then stir in the miso paste.
