Have you ever heard of zucchetti? You will after this recipe! This is a quick and easy dish, perfect for the first days of spring.
2-3 zucchini, depending on the size
juice of half a lemon
1 clove garlic
1-2 tablespoons of coconut (or almond) milk
salt and pepper
a few basil leaves as garnish
To make this fun zucchini spaghetti (zucchetti!), you’ll need a julienne peeler or a spiralizer. Use this to make your ‘pasta’. Place the zucchini spirals in a large bowl.
Mince the garlic. Now make the sauce by adding the garlic, lemon juice, avocado flesh and a tablespoon of coconut milk in a food processor and process until smooth. If it’s too thick, add another tablespoon of coconut milk. Use salt and pepper to season the sauce.
Add the creamy avocado sauce to the zucchini spirals and mix. Top it with some basil leaves and enjoy!
Instead of the avocado sauce, you can also add some homemade pesto to the zucchetti!
