Detoxing green gazpacho with avocado and cucumber

No need for a stove to enjoy a healthy soup

Phew, during those hot days I’m always in for a nice refreshing meal. When it’s so warm outside I’m not really in the mood to spend a lot of time in the kitchen and making the house even hotter by using the oven. And today I have a similar great recipe: for a green gazpacho this time.

This detoxing soup is not only refreshing, but it’s also a perfect choice when you’ve kinda let yourself go a bit during a summertime barbecue.. This avocado cucumber soup makes a great lunch as well and because you eat it cold, easy to take to work too! No need for a microwave or stove to enjoy a healthy soup.


1 cucumber
2 avocados
1 cup nonfat yoghurt
juice of 1/2 lemon
1 small jalapeno chili, minced (you can remove the seeds to reduce the spiciness of the pepper)
1 small shallot
1 clove garlic
salt and pepper

Optional: some roasted almonds or pumpkin seeds

Cut ? of the cucumber in small dices. These are your vegetable “croutons” to use later! Cut the rest of the cucumber in larger chunks and put them in your blender or food processor. Peel the avocados and cut them in chunks. Add the avocado, yoghurt, lemon juice, jalapeno, shallot and garlic to the blender or food processor as well.

Pulse everything until it’s smooth. If the soup is on the thick side, add some cold water to make it thinner. Season to taste with salt and pepper. Pour the detoxing soup into a bowl and use the small cucumber croutons to garnish. Add some roasted almonds or pumpkin seeds on top if you like.
